Inspired by the Crazy Bear, despite the fact I hate ham, I decided for Christmas I would do a ham hock terrine starter.I found the recipe and this afternoon, having soaked the 3 hocks overnight and a teaspoon of coriander seeds, peppercorns, onion, carrot and celery and two and half hours later, it was time to shred it, add parley and gherkins. This was followed by draining the liquor which is boiling to reduce to make a jelly. It is now eight o'clock, I started at one forty five.
A simple starter has become an epic saga and not helped by dropping a bottle of rose wine on my toe which is currently killing me.
However...I think it might be an ok start to the Christmas season and I am feeling a bit smug....I hope it will be a bit of a showstopper.
